The Beginning: Agia Paraskevi (2009)
In the spring of 2009, in the heart of Agia Paraskevi, the first Fysis patisserie was born.

It was the natural next step after our journey in organic products with Bio-smart, and the realization of a dream we had carried within us for years: to create desserts that capture the simplicity, honesty, and ethos of Greek tradition.

In our first space, we wanted every sweet to be a small experience of authentic Greekness — to awaken memories, to carry the fragrance of seasonal fruits and herbs, to be crafted with passion and respect for the ingredients.

There, we experimented, refined, and perfected recipes with organic ingredients, without artificial additives, using sugar in moderation or natural sweeteners, always highlighting the very best that the Greek land has to offer.

From day one, Fysis was not just a patisserie, but a place where hospitality, a warm smile, and quality met tradition and innovation.
